Practical usage of countable and uncountable nouns

My question is about some nouns that can be countable or uncountable depending on context. Nouns: potato, carrot, onion, tomatoes, etc. What would be correct in everyday speech: I need to buy potato/carrot (keeping in mind that we are speaking about indefinite amount of some product) or I need to buy potatoes/carrots (because these nouns are countable)? I am peeling potato/carrot or I am peeling potatoes/carrots?I think that this misunderstanding is connected with grammatical difference between English and my first language.
